Easily make this sandwich gluten free by picking your favourite gluten free bread. I’ve used my Slow cooked pulled brisket for this recipe and the flavours are seriously so good!
Ingredients Notes & Substitutions
Here is everything you need to make this Brisket Grilled Cheese recipe, including any ingredients notes and possible swaps. The ingredient quantities are in the recipe card at the bottom of this post.
- pulled beef brisket – I’ve used my pulled beef brisket recipe, which honestly takes this sandwich to a whole new level. It takes 10 minutes to prep and the oven does the rest of the work. It really is the perfect brisket for this recipe as it’s juicy and so flavoursome. It’s an excellent way to use up that leftover brisket!
- red cabbage – make sure to really finely slice or shred the cabbage. You can swap the red cabbage for green cabbage.
- pickled red onion slices – the combination of pickled onions, brisket, cabbage and cheese is seriously delicious! You can use store-bought pickled onions or these quick pickled red onions.
- cheddar cheese – I love a sharp cheddar on these sandwiches but you can use a cheese of your preference. Other kinds of cheese that would go well are gruyere, monterey jack cheese or mozzarella if you want that delicious cheese pull.
- butter – I recommend a salted grass fed butter. Butter from grass-fed cows has some omega 3 in it and is more nutritious than grain fed.
- bread slices – you can use your favourite type of bread like wholemeal, wholegrain, sourdough bread, brioche or your go-to gluten free bread.

Optional extras
This sandwich is such a great combo of flavours, but these ingredients would be a great addition:
- Dijon mustard or seeded mustard
- mayo or bbq sauce
- sauerkraut

How to Make Brisket Grilled Cheese
Lay a slice of bread on a board or plate and top with brisket, shredded cabbage, cheese and pickled onion. Butter the remaining piece of bread on the outside and place on top.
Bring a large skillet to a medium heat. Place the sandwich buttered side down and then butter the other slice of bread. Toast the sandwich until golden brown, pushing the sandwich down with a metal spatula.


When the bottom side is golden brown, flip the sandwich and repeat on the other side. You might need to turn the heat down a little if the bread is browning too quickly. To melt the cheese more quickly you can also place the lid on the pan for a few minutes.


Once golden brown and the cheese is melted, remove from the heat, slice and serve.
Alternatively, toast on a sandwich press.
Brisket Grilled Cheese Sandwich

Equipment
- Skillet or
- Sandwich Press
- Sharp knife
- Chopping Board
- Side plate
Ingredients
- 2 slices gluten free bread, or bread of choice
- 1 tablespoon butter
- ¼ cup pulled beef brisket
- ¼ cup grated cheddar cheese
- ¼ cup red cabbage, finely shredded
- 1 tablespoon sliced pickled red onions
Instructions
- Lay a piece of bread on a board or plate. Pile on the shredded red cabbage and then the pulled brisket.
- Layer the grated cheese over the top of the brisket and then place the pickled red onion on top of the cheese. Place the second piece of bread on top, and then spread the top slice with butter.
- Place the sandwich on the sandwich grill or in a frying pan heated to a medium-low heat, butter side down. Butter the top piece of bread.
- Once the sandwich is golden brown on the bottom, flip over and cook until golden brown on the second side and the cheese in the centre is melted.
- Turn off the heat and remove from the pan, slice and serve warm.
