Looking for a way to use up that leftover pulled brisket? Then you need to make this Brisket Grilled Cheese Sandwich. Rich and flavoursome pulled brisket paired with cheddar cheese, pickled onions and crunchy red cabbage, it's a match made in heaven!
Lay a piece of bread on a board or plate. Pile on the shredded red cabbage and then the pulled brisket.
Layer the grated cheese over the top of the brisket and then place the pickled red onion on top of the cheese. Place the second piece of bread on top, and then spread the top slice with butter.
Place the sandwich on the sandwich grill or in a frying pan heated to a medium-low heat, butter side down. Butter the top piece of bread.
Once the sandwich is golden brown on the bottom, flip over and cook until golden brown on the second side and the cheese in the centre is melted.
Turn off the heat and remove from the pan, slice and serve warm.
