Iโ€™ve created this recipe using almond milk and gluten free bread so that it is both gluten free and dairy free. For more healthy and yummy breakfast recipes I recommend trying myย Raspberry Baked Oats,ย Almond Flour Crepesย or myย Banana Buckwheat Pancakes.

Whatโ€™s to Love About This Recipe

  • allergy friendlyย โ€“ using non-dairy milk and gluten free bread, this recipe is perfect for anyone with a dairy allergy or intolerance or a gluten intolerance. You can easily swap the almond milk to a nut-free plant based milk for anyone with a nut allergy.ย
  • perfect for weekend brunchย โ€“ even though this easy French toast recipe is quick to make, itโ€™s still fancy enough for a weekend brunch. Serve topped with a dollop of your favourite yoghurt, fresh berries and a drizzle of pure maple syrup for a truly special breakfast dish.ย
  • extra proteinย โ€“ who needs eggs on toast when you can have French toast instead? Itโ€™s not only really yummy but is a great source of protein as well thanks to the eggs.ย

Ingredients Notes & Substitutionsย

Simple French toast is essentially thick slices of bread dipped into an egg mixture and fried until golden on each side. It is made using a handful of basic ingredients, all of which are listed below along with any possible substitutions and ingredients notes. You can find all of the ingredients for this recipe at your local grocery store. Find the complete recipe with ingredient quantities at the bottom of this post.ย You will need the following ingredients:

  • eggsย โ€“ eggs are an important ingredient in this recipe and canโ€™t be swapped for any other ingredient. Iโ€™ve used large eggs for this recipe.ย
  • unsweetened almond milkย โ€“ you can use any other plant based milk like oat milk, soy milk or cashew milk. If you can tolerate dairy then you can also use cowโ€™s milk.ย
  • vanilla extractย โ€“ vanilla extract can be swapped for seeds scraped from vanilla beans, almond extract, ground cinnamon or pumpkin spice.ย
  • gluten-free breadย โ€“ you really can use any type of bread that you choose for this recipe, whether that is gluten free bread like what I have used, sandwich bread, sourdough or brioche bread. The type of bread you use may differ in how much liquid each slice absorbs.ย
Ingredients for Almond Milk French Toast laid out in individual bowls.

โ€‹Optional toppingsย

  • pure maple syrupย โ€“ you can also use powdered sugar or a drizzle of honey.
  • coconut yoghurtย โ€“ again, if youโ€™re not dairy free you could use a large dollop of whipped heavy cream. Otherwise just use your favourite yoghurt (I would recommend vanilla) or no yoghurt at all. ย
  • fresh berriesย โ€“ you could also use any other seasonal fresh fruit like banana slices, stewed apples or plums. ย

First, make the egg mixture by adding the eggs, vanilla and almond milk to a medium bowl or shallow dish. Whisk to combine.ย

Heat butter, vegan butter, olive oil or macadamia oil in a large skillet on a medium heat. Dip a slice of bread into the egg mixture, pushing it down so that the bread is completely submerged. Once it has absorbed a good amount of liquid, place the soaked piece of bread into the hot frypan. Fry the eggy bread on each side until golden brown and then transfer to a plate.ย

Repeat this step with the remaining bread slices until all of the egg custard mixture has been absorbed. Depending on the size of your pan you may be able to fry two slices at a time.ย

You can either serve each slice of French toast straight away or keep warm on a large plate by covering with a clean tea towel.ย

To serve, add one-two slices of French Toast to a plate, top with fresh berries, a dollop of yoghurt and a drizzle of maple syrup. Serve warm.ย

Storage

Store leftover French toast in an airtight container in the fridge for up to two days. Reheat in the microwave before serving.ย

Instructionsย

  2. Place a frying pan on a medium heat and add the butter, vegan butter, olive oil or macadamia oil.
  3. Place a slice of bread into the egg mixture and push down to submerge. Once soaked, transfer the eggy bread to the frying pan. Fry up to two slices of toast at a time, if your pan is large enough. Fry the French toast on each side until golden brown.
  4. Repeat the previous step until all of the egg mixture has been used. This will create around 6 pieces of French toast, depending on the type of bread you use. Some breads will absorb more liquid than others.
  5. Serve the French toast warm, around two slices per person, topped with fresh berries, a dollop of yoghurt and a drizzle of maple syrup.
