Looking for the perfect brunch recipe? My easy almond milk French toast is so delicious, simple to make and the perfect brekkie for slow mornings. Made using almond milk and gluten free bread, this recipe is both dairy free and gluten free.
Add the eggs, almond milk and vanilla extract to a medium, shallow bowl. Whisk to combine.
Place a frying pan on a medium heat and add the butter, vegan butter, olive oil or macadamia oil.
Place a slice of bread into the egg mixture and push down to submerge. Once soaked, transfer the eggy bread to the frying pan. Fry up to two slices of toast at a time, if your pan is large enough. Fry the French toast on each side until golden brown.
Repeat the previous step until all of the egg mixture has been used. This will create around 6 pieces of French toast, depending on the type of bread you use. Some breads will absorb more liquid than others.
Serve the French toast warm, around two slices per person, topped with fresh berries, a dollop of yoghurt and a drizzle of maple syrup.

Storage
Store leftover French toast in an airtight container in the fridge for up to two days. Reheat in the microwave before serving.
