Boil the potatoes until they can be pierced easily with a fork.
Place potatoes into an air fryer basket or on a well greased baking tray. Use a potato masher to squash down. Drizzle with extra virgin olive oil and season with salt & pepper.
Air fry for 15 minutes at 356 F (180 degrees Celsius) or bake for 55 minutes in the oven at the same temperature.
Serve topped with finely chopped fresh herbs.
