You will need: - zucchini - extra virgin olive oil - salt & pepper - carrot - brown onion - spring onion - eggs - buckwheat flour - tapioca starch (or corn flour) - baking powder - bacon - cherry tomatoes
Add the grated carrot, zucchini and brown onion to a bowl together with the spring onions, eggs, olive oil, salt & pepper, buckwheat flour, tapioca starch & salt. Mix together until well combined.
Add ingredients to a bowl.
Add the sliced bacon and stir through. Pour mixture into a greased baking dish, top with halved cherry tomatoes and bake until golden and cooked through.
Slice and serve warm or refrigerate in an airtight container.
