A quick and easy breakfast for those busy weekday mornings. This hemp seed granola is made using wholesome ingredients and is filled with healthy fats, protein and fibre.
Preheat the oven to 160°C/320°F (conventional). Line an extra-large baking tray with baking paper and set aside.
In a medium sized mixing bowl add the 1/2 cup extra virigin olive oil, 1/4 cup pure maple syrup, 2 tablespoons tahini and 1 tablespoon vanilla extract. Whisk to combine.
In a large bowl add the 2 cups rolled oats, 1 cup hemp seed and 1 cup flaked almonds. Stir to combine.
Pour the wet ingredients into the dry ingredients and mix through until all of the oat mixture is coated.
Tip the granola mixture out onto the tray. Spread out evenly, then use the back of a large spoon to press the mixture firmly into the tray. Bake for 25 minutes on the middle shelf, or until golden brown.
Remove from the oven and allow to cool completely before breaking up into clusters. Store in an airtight jar.
