Massage the kale

A good kale salad will have massaged kale. Add the kale to a large bowl and drizzle with olive oil. Use your hands to massage the kale until tender.

Make the salad dressing

Add olive oil, maple syrup, apple cider vinegar, and sea salt to a small bowl. Whisk until the ingredients have emulsified and no longer separate.

Assemble the salad

To the kale add the dried cranberries, diced apples and toasted pecans. Drizzle with as much dressing as desired and toss to combine.

Storage

Store in an airtight container in the fridge for up to 4 days.
