- kale - red onion - semi-dried tomatoes - flaked almonds

Massage the kale
A good kale salad will have massaged kale. Add the kale to a large bowl and drizzle with olive oil. Use your hands to massage the kale until tender.
Make the salad dressing
Add tahini, honey, lemon juice, olive oil, sea salt and dijon mustard to a bowl. Whisk until the ingredients have emulsified and no longer separate.
Assemble the salad
To the kale add the semi-dried tomatoes, shaved parmesan, toasted almonds and red onion. Drizzle with as much dressing as desired and toss to combine.
Store in an airtight container in the fridge for up to 4 days.
