- chicken Marylands - yellow potato - broccolini - olive oil - lemon juice & zest
- fresh herbs - shallots - garlic - salt & pepper - onion & garlic powder
Marinade the chicken.
Add all of the ingredients for the marinade to a bowl and whisk to combine. Add the chicken to the bowl and coat evenly.
Roast the potatoes.
Add the halved potatoes to a lined baking tray. Sprinkle with dried rosemary, garlic powder, onion powder and salt. Drizzle with olive oil and toss to coat evenly. Bake the potatoes for 20 minutes.
Roast the chicken.
Move the potatoes to one end of the tray and add the chicken to the tray. Return the tray to the oven.
Add the broccolini to the tray.
After 30 minutes, remove the tray from the oven and add the broccolini to the tray. Return to the oven for 10 minutes.
Divide the chicken, potatoes and broccolini between four plates and serve hot.
