Bircher Muesli

- rolled oats - almonds - apples - pumpkin seeds

- flaxseeds - vanilla extract - coconut milk - toppings of choice

Ingredients

Roughly chop almonds.

Pour almonds out onto a board and use a sharp knife to roughly chop them.

Add dry ingredients for bircher muesli to a bowl.

To a large mixing bowl add the rolled oats, chopped almonds, flaxseeds and pumpkin seeds. Set aside.

Grate the apples.

Coarsely grate the apples and add them to the bircher muesli mixture.

Add the remaining ingredients.

Add the coconut milk beverage and vanilla extract and stir to combine. Cover with a clean tea towel or cling wrap and refrigerate overnight to set.

Storage & Serving

Divide the bircher muesli between individual serving size jars or airtight containers. Refrigerate for up to 3 days. Serve topped with seasonal fruit, yogurt and a dash of maple syrup.
