If you're a fan of a matcha latte then you will love this Matcha Chia Pudding. It's creamy, naturally sweet and packed with goodness. Made with white chia seeds, coconut milk, matcha powder and coconut yoghurt, it's a beautiful make-ahead breakfast or snack that's dairy free, gluten free, refined sugar free and vegan. Just 5 minutes of prep and the fridge does the rest!
2/3cupGreek yoghurtor natural unsweetened coconut yoghurt, plus extra to serve
Instructions
Add the chia seeds, coconut milk, maple syrup, vanilla extract and matcha powder to a bowl and whisk to combine. Continue whisking until the mixture is well combined and beginning to thicken.
Once the mixture begins to thicken, add the yoghurt and whisk to combine.
Divide the chia pudding between 4 jars, cover and refrigerate for at least one hour to set.
Serve topped with a dollop of yoghurt and your choice of toppings.
