A delicious and high protein breakfast, this savoury mince recipe is so easy to make and tastes SO good! Make ahead and store in the fridge ready to heat up for breakfast.
Bring a large frying pan or shallow casserole pan to a medium heat. Add the olive oil and then the diced onion, celery and carrot. Sauté until the onion is translucent. Add the garlic and sauté until fragrant.
To the pan add the beef mince and break up as it browns. Once the mince is completely browned add the tomato paste, Worcestershire sauce, salt, pepper, thyme, bay leaves, maple syrup and beef broth and stir to combine.
Using a spatula, push the meat and vegetables across to one side to create a pool of liquid. Add the corn flour to the liquid and whisk straight away, making sure to whisk out any lumps. Stir through the rest of beef mixture, turn the heat to low and simmer for a further 10 minutes. Once the gravy has thickened, turn off the heat.
Remove the bay leaves before serving. Serve over buttered toasted bread and topped with a fried egg, tabasco sauce (optional) and chives.

Storage
Store leftovers in an airtight container in the fridge for up to 3 days or in the freezer for up to 6 months. If freezing, store in individual portion sized containers for easy defrosting.
