Instructions
Add the cashews to a bowl and top with water. Cover and soak in the fridge overnight. Alternatively, add to a bowl and top with boiled water. Soak for half an hour.
Strain the cashews and add to a high powered blender.
Add the chipotle, paprika, salt, lime juice and water.
Blend on high until smooth and creamy.

Store leftover sauce in an airtight container or sealed glass jar in the fridge for up to 5 days.
