Add leek to a large dutch oven along with olive oil and sauté until tender. Add the onion and garlic and sauté until fragrant.

Sauté Leek.

Add the cauliflower, sage, broth and salt and pepper. Simmer until cauliflower is tender.

Add remaining ingredients.

Add almond milk and use a stick blender or benchtop blender to blend until smooth and creamy.
