You will need: - almond flour - coconut sugar - coconut flour - tapioca starch - cream of tartar - baking soda - baking powder - cinnamon - egg - coconut oil - vanilla extract

In a bowl, whisk together the coconut oil, coconut sugar, vanilla extract and egg.

Mix wet ingredients.

Add the coconut flour, almond flour, baking soda, baking powder, cinnamon & cream of tartar to a bowl & whisk together.

Mix together dry ingredients.

Use a spatula to mix together the wet and dry ingredients, add the tapioca in last. 

Mix together.

Refrigerate cookie dough before rolling into balls and then rolling the cookie dough balls in cinnamon sugar. 

Roll.

Place cookie dough balls onto a baking paper lined baking tray and push down before baking for 7 - 10 minutes. 

Bake.
