A fresh and vibrant side dish, this Cilantro Lime Rice is easy to prepare and goes perfectly with many Asian and Mexican dishes. Cooking instructions included for the rice cooker and stove top.
Add the jasmine rice to a large bowl or saucepan. Top up bowl or saucepan ¾ way full and wash using your hand. Strain off the starchy water and then repeat this 2-3 times until the strained water is clear, meaning the extra starches have been removed.
1 cup Jasmine rice
Transfer the strained rice to the rice cooker bowl and top with 2 cups of water as well as salt. Place the rice cooker bowl into the rice cooker and close the lid.
2 cups water, ½ teaspoon sea salt
Turn the rice cooker on and select the “Jasmine” setting. Press start. Once the rice cooker has finished cooking, allow the rice to rest in the machine for a further 5 minutes.
Remove the rice from the rice cooker and use a fork to fluff the rice. Add the lime juice, lime zest and cilantro. Toss to combine.
1 lime, ½ cup cilantro
Serve alongside your favourite protein and vegetables.

Stove Top Instructions
To cook on the stove top, rinse the rice as explained in the recipe. Then,
place the rinsed rice into a medium sized saucepan along with 2 cups of water (see recipe post for instructions on using the knuckle measure method) and sea salt.
bring to a boil and then reduce to a rapid simmer until most of the water has been absorbed.
turn off the heat and place the lid onto the saucepan. Allow to steam for at least 5 minutes before fluffing rice with a fork.
