Add the red wine, brandy and pure maple syrup or honey to the pan and stir to combine.
Add the orange slices, ginger slices, cloves, star anise and cinnamon sticks and bring to a gentle simmer. If any bubbles start to appear then turn the heat right down to low.
After ten minutes of gentle heat, taste a spoonful of mulled wine. If the spice level and sweetness is to your taste then remove from the heat. If a stronger spice level is desired, cook for another 30 minutes (remembering to not allow the liquid to bubble). If more sweetness is desired then add more maple syrup or honey to taste.
