Roasted Sweet Potato & Kale Salad

- kale - sweet potatoes - pumpkin seeds - spices - olive oil  - avocado

- feta - garlic powder - red onions - dijon mustard - honey

Ingredients

Roast sweet potatoes.

Toss the sweet potato pieces in spices, olive oil and salt. Spread out into an even layer on two separate trays.

Roast kale and onion.

Add most of the kale to a large baking dish. Add the remaining kale to a small baking dish. Place the sliced red onions into the larger baking dish. Place both trays into the oven to bake.

Toast seeds.

Add the pumpkin seeds to a small baking tray and toast.

Assemble salad.

Once the kale, onions and sweet potatoes are roasted, assemble the salad. Layer the kale, onions, avocado, pumpkin seeds, sweet potato, feta and kale chips. Drizzle with honey mustard dressing.
