Moroccan Lamb Stuffed Sweet Potatoes

- sweet potatoes - olive oil - ground lamb - garlic - frozen peas - baby spinach

- tomato paste - fresh cilantro - paprika - turmeric - cumin - salt & pepper

Ingredients

Roast sweet potatoes.

Cut the sweet potatoes in half lengthways. Coat in olive oil and season before roasting in the oven until tender.

Make Moroccan lamb mince.

Bring olive oil to a medium heat in a large fry pan. Add the garlic and spices and sauté until fragrant. Add the mince and brown. Once browned add the tomato paste, spinach and peas.

Make garlic yogurt.

Add the yogurt, garlic and salt to a bowl and stir to combine.

Assemble.

Stuff the roasted sweet potatoes with the lamb mixture. Top with garlic yoghurt and finely chopped fresh cilantro to serve.
