- chicken Marylands - potato - olive oil - lemon juice & zest
- garlic - dried oregano - garlic & onion powder - salt & pepper
Marinate the chicken.
Add all of the marinade ingredients to a large bowl and whisk to combine. Add the chicken pieces and toss to coat evenly. Set aside.
Season & Roast Potatoes.
Add the potatoes to a parchment paper lined baking tray. Toss in olive oil and seasoning. Seperate and bake.
Add chicken to tray.
After 20 minutes, remove the tray from the oven. Move the potatoes up to one end of the tray and add the chicken pieces to the other end of the tray.
Add broccolini to tray.
Once the chicken is cooked through, move the chicken up to one end of the tray and add the broccolini. Place the tray back into the oven until the broccolini is just cooked.
Serve the chicken, potatoes and broccolini straight away. Or store in individual airtight containers and in the fridge for up to 3 days.
